A: I reached out to Brenna Bertram, West Palm Beach marketing team leader for Whole Foods Market (multiple locations; wholefoods.com), and she promptly responded.
“The Kale, quinoa and grape salad is a wonderful summer dish. Kale, one of our favorite nutrient-dense leafy greens, paired with quinoa, the powerhouse of grains containing the highest amount of protein, makes for a one-two punch!” she said. “The grapes add a hint of sweetness balancing the spice of the jalapeño peppers.”
If you’re shopping for the salad at your local Whole Foods store, keep in mind that selections vary based on location and seasonality, Bertram said.
Recipe: Kale, quinoa and grape salad
1 1/2 tablespoons lemon juice
1 1/2 tablespoons lime juice
1/4 cup olive oil
Kosher salt, to taste
1 ounce quinoa, cooked and cooled
1 tablespoon pumpkin seeds, toasted and cooled
4 ounces julienned kale
Pinch of chopped fresh cilantro
Pinch of minced jalapeño pepper
1/4 cup red seedless grapes
1 Using a small bowl, whisk together lemon and lime juices. Slowly whisk in olive oil, season with salt.
2 Using a medium bowl, combine quinoa, pumpkin seeds, kale, cilantro, jalapeño pepper and grapes. Toss with dressing. Season with salt, to taste.
Makes 1 serving.
