Fresh thyme is a versatile herb, but picking fresh thyme leaves can be a tedious kitchen task. For smaller amounts hold the sprig at the thickest end of the stem with one hand. Using the other hand, loosely pinch the stem with your thumb and forefinger. Slide your fingers the length of the stem to strip the leaves. If your recipe calls for larger quantities, feed the stems through a fine-mesh strainer that pulls the leaves off while collecting them in the basket. Or if time permits, wrap a bundle of sprigs in plastic wrap leaving the ends exposed and freeze. Roll the frozen bundle vertically back and forth between your hands and the frozen leaves will fall through the open end.
