KOMPAS.com - Tepung merupakan salah satu bahan penting untuk membuat kue. Tepung dibuat dengan cara digiling dari bahan kering seperti biji atau umbi.
Jenis tepung yang paling banyak digunakan untuk membuat aneka kue adalah tepung terigu. Tepung terigu terbuat dari biji tanaman gandum yang punya kandungan protein di dalamnya.
Tepung terigu protein sedang atau all purpose flour merupakan jenis terigu paling banyak digunkaan. Kandungan proteinnya berkisar 11-13 persen.
Tepung ini juga sering disebut dengan tepung serbaguna untuk kue dan aneka gorengan.
2. Tepung terigu protein rendah
Jenis tepung terigu yang selanjutnya ini memiliki kandungan protein kurang dari 11 persen. Selain itu, tepung terigu ini juga memiliki pati lebih banyak dibandingkan jenis tepung terigu lainnya.
Jika ingin membuat kue dengan tekstur renyah dan kering, gunakan jenis tepung ini.
3. Tepung terigu protein tinggi
Seperti namanya, tepung terigu ini memiliki kandungan protein lebih banyak dari jenis lainnya yaitu sekitar 13-14 persen. Kamu bisa menggunakannya untuk adonan yang membutuhkan pengembang kokoh dan bervolume tinggi.
Jenis terigu ini cocok digunakan untuk membuat roti-rotian, donat, mie, dan lainnya.

4. Tepung swakembang

Jenis tepung terigu yang satu ini cocok untuk membuat adonan muffin atau quick bread.
5. Tepung gandum utuh
Tepung gandum utuh atau whole wheat flour meruapakn tepung yang dibuat dari penggilingan biji gandum utuh.
Tepung ini memiliki lebih banyak vitamin, mineral, serat, dan pati dibandingkan jenis terigu lainnya. Hanya saja, warna dari tepung gandum utuh lebih cokelat dan aromanya lebih nutty.
